Lobster Mac and Cheese
Makes 10 Servings

Cheese Sauce:

• Roux with equal parts butter and flour until it's a golden, nutty aroma
• Add 1 quart milk and 2 cups of heavy cream on medium heat until warm
• Gradually whisk in 3 cups of sharp cheddar and 1 cup of parmesan cheese until thickened

Pasta:

• Bring pot of water to boil
• Add 5 lbs of pasta and cook to Al dente

Mix pasta and cheese sauce together and add cooked lobster.
